The court of Versailles, with its penchant for sweets and culinary innovations, favored this evolution. Fruit paste, with its rich fruity flavors and pleasant texture, was often served at banquets and receptions, reflecting the taste for luxury and refinement.
The development of sugar cane plantations in the French colonies allowed a more regular supply of refined sugar, essential for the manufacture of confectionery such as fruit paste.
